Maison Mumm is the official champagne sponsor of the Melbourne Cup Carnival, and this year its Cup cocktail is the Le Mistral. Inspired by the sea, it's a winning blend of gin, liqueurs, grapefruit juice, the newly released Mumm Grand Cordon Rosé and (for a touch of theatre) dry ice.

- 10 ml Lillet Rosé
10 ml crème de cassis
10 ml seaweed-infused Plymouth gin
30 ml fresh pink grapefruit juice
75 ml G.H.Mumm Grand Cordon Rosé Champagne
1 pellet of dry ice
- Shake the Lillet Rosé, crème de cassis, gin and pink grapefruit juice with ice in a cocktail shaker.
- Pour into a champagne saucer. Top with rosé champagne.
- Garnish with seaweed wafer and drop in pellet of dry ice.
